Jambalya Pasta

Ingredients:

Meat:

3 large chicken breasts (cut into bit size pieces)

6 ounces Andouille sausage

1/2 pound shrimp (peeled and deveined)

Vegetables:

1/2 cup yellow onion (diced)

1 small red bell pepper (remove seeds, cut in strips)

1 small green bell pepper (remove seeds, cut in strips)

1 large tomato (chopped)

Dairy:

2 ounces cream cheese

1/2 cup shredded cheddar cheese

Seasonings:

2-3 tablespoons Cajun Seasoning

1 tablespoon minced garlic

Chives (for garnish)

Other:

2 tablespoons olive oil

2 1/2 cups uncooked penne pasta

1 cup chicken broth

Directions:

  • Season the chicken pieces with part of the Cajun seasoning. Let sit.

  • In a skillet, heat olive oil. Add onions and stir until soft. Add chicken and cook until brown on both sides. Add in garlic and sausage, cook for one minute. Add uncooked pasta, chicken broth, sliced peppers, tomatoes, and Cajun seasoning. Stir it all together and bring to a boil.

  • Reduce heat and simmer for 15 minutes, and cover. Add shrimp, stir and simmer for 7 minutes.

  • Uncover and cook until most liquid is absorbed.

  • Remove from heat. Stir in cream cheese and cheddar cheese, until cheese is melted.

  • Garnish with chives.

  • Enjoy :)
